Wish I could have a cookie exchange with all y'all. If you want, though, we could still swap the recipes. Let me know if you've added a recipe, I won't "Tag" anyone.
Glazed Orange Ginger Cookie
(as followed from the Stars and Stripes)
6 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
1 cup shortening
2 cups sugar
2 eggs
3 large oranges
3 T candied ginger (I added more)
½ cup buttermilk (squirt of lemon juice in milk)
½ cup powdered sugar
2 T orange juice
Preheat oven to 375F. Line baking tray with baking paper. In large bowl whisk flour, baking soda, and baking powder. Set aside.
In 2nd large bowl, combine the shortening and sugar. Use an electric mixer to beat until light and fluffy. Add eggs and beat until smooth.
Use a fine grater to remove the zest from the oranges. Add zest and candied ginger to the bowl and mix it in. Juice the oranges to get about 1 cup, then add it and the buttermilk to the bowl.
Use the mixer to beat in the liquids. The dough may curdle; this is normal. Add the dry ingredients 2 cups at a time. Drop Tbsp mounds on prepared sheet and bake 8-10 minutes. Let cool on wire rack and glaze.
Mix the powdered sugar and orange juice and spoon it on or brush it on.
